Il suino di PURA razza  “CINTA SNESE DOP”, tipo genetico Cinta Senese è un suino che, per sua natura, non può essere allevato chiuso in una stalla, ma viene lasciato libero allo stato brado in campi e boschi, dove può cibarsi di tutto quello che trova, dalle ghiande alle radici, dai tuberi, ai tartufi e all’erba, insomma tutto quello che l’ambiente gli offre. Solamente nei periodi di “magra” gli viene somministrato mangime naturale a base di mais e orzo e così via.

Tutti prodotti, che i soci della “Compagnia del Suino Cinto Toscano”, riuniti in un consorzio sono impegnati ad usare. La zona di origine della suino Cinto Toscano è il comprensorio della sola regione Toscana, dove già dal 1300 si hanno tracce di questa razza. Il nome deriva dalla fascia bianca, la “Cinta” appunto, che avvolge il garrese, le spalle e gli arti inferiori.

La peculiarità dei salumi di puro suino cinto toscano stà nella consistenza della carne DOP, soda e compatta e nella sapidità del loro grasso, che ricorda i profumi dei boschi dove questi suini hanno vissuto. La stagionatura di questo prosciutto varia a seconda della pezzatura da un minimo di 18 a 24 mesi.[:en]Medium weight approximately 8.00 – 13.00 Kg.
