Il guanciale è ricavato da un unico pezzo di carne suina, situato tra la gola e la guancia dell’animale, da cui prende il nome.

Ideale per essere gustato al coltello, questo salume è perfetto per la preparazione della pasta all’amatriciana, ma sorprendentemente si sposa molto bene con pesci quali le triglie e le code di rospo.
