Prodotta solo da carne di pancia di suini del peso di 170 – 230 Kg, caratterizzata da strati successivi di magro e grasso, dopo una leggera salatura, viene arrotolata e interamente legata a mano con il vecchio, classico spago, non elasticizzato. Dopo una lunga stagionatura, è possibile gustarne il dolcissimo sapore tanto che la fetta, dal caratteristico grasso divenuto ormai rosato, tagliata finissima si scioglie fra lingua e palato. Deliziosa gustata su una fetta di pane bianco ancora caldo.

È un salume da intenditori, di difficilissima stagionatura (a volte tende a non saldarsi) da non confondere con quelle pancette, in comune commercio, stagionate si e no un mese, nelle quali il grasso non “fatto” allappa in bocca e risulta quasi indistruttibile anche con la masticazione.[:en]Variations: of Cinto Toscano or Sambucano
